Vidalia Onion Casserole

Preheat oven to 350 degrees.  Grease a 9x13-inch baking dish with butter.  Make sure you coat both sides and the bottom.  In a large skillet, sauté onions in 1/2 cup melted butter stirring and flipping occasionally. Spread the sauteed onions over the bottom of the dish. In a large bowl, mix together the 1/2 and 1/2, eggs, salt and pepper until fully combined.  Pour this mixture over the onions. Sprinkle the shredded cheese evenly over the top. Bake for 30 minutes.

Meanwhile, break up 1 sleeve of ritz crackers.  Melt 3 tablespoons of butter.  Add the broken crackers to the butter mixture.  After the casserole has cooked for the initial 30 minutes, sprinkle this on top of and cook an additional 5 minutes.  Enjoy!

Ingredients:

4 large Vidalia onions, sliced 

1/2 c butter, 3 Tbs. + 2 Tbsp for greasing dish

1 sleeve Ritz crackers

2 cups of 1/2 and 1/2

3 large eggs

1 cup Sharp Cheddar Cheese

1 cup Swiss Cheese

1/2 teaspoon salt

1/4 teaspoon black pepper
